SICUS SONS Monastrell 2013

Controlled by Man yet dependent on Nature’s great balance, this wine is intended to be a statement of both a philosophy and a quest – to bring out the ultimate expression of the terroir.
This wine is totally inspired by the landscape which surrounds it…it is influenced by the character of the native yeast and breathes in the same earth which produced it, to the same sound vibrations.

Alcohol: 15.0%
Total acidity: 82 g/l
pH: 3.2

Finca La Caseta:
Located at 170 m altitude, with a strong maritime influence due to the proximity of the sea (6km). Shallow calcareous soils, low in organic matter . Total production 250 bottles.

Production:
(Yields around 2kg per vine)
The grapes were harvested on 7 October, in the early morning. They were immediately de-stemmed and placed in clay amphoras buried in the middle of the vineyard. Fermentation started spontaneously with the indigenous yeasts and the must macerated on the skins for 26 days. It was then pressed and returned to the amphoras to finish fermenting.
Over the course of the next 5 months the wine was left to rest with the yeasts in the buried amphoras.
In March, the wine was taken from the vineyard and stored in the winery.
Bottled in May 2014.

Tasting notes:
Intense cherry colour with a consolidated layer.
On the nose stand out notes of plums, blackberries, raspberries and a subtle violet floral background.
The entry is fresh and elegant, with and step-by-mouth silky and structured. The finish is kind, long, and mineral.
